Summer Berry Gratin

Serves: 12

Ingredients

  • 200ml Millac Gold
  • 10 egg yolks
  • 100g caster sugar
  • 250g strawberries
  • 250g raspberries
  • 250g blueberries
  • 250g blackberries
  • 200g cherries
  • 200g diced mango
  • fresh mint

Method

Arrange the fruit and berries in an earthenware dish

Whisk the Millac Gold into soft peaks

Whisk the yolks and sugar over a bain marie

Once light, fluffy and doubled in size, remove from the heat

Fold in the Millac Gold

Spoon over the fruit

Grill or use a blow torch to glaze

Decorate with fresh mint and serve
