Spiced Dublin Bay Prawns

Serves: 12
Ingredients
- 1000ml Millac Gold
- 50g Lakeland Dairies Butter
- 4kg fresh Dublin Bay prawns
- 400g diced sweet potato
- 20g chopped garlic
- 400g chopped onion
- 5g turmeric
- 5g ground cumin
- 5g garam masala
- 10g chopped fresh coriander
- sea salt
- milled black pepper
Method
Melt the Lakeland Dairies Butter in a thick bottom pan and add the spices, sweet potato, garlic and onions.
Pour in the Millac Gold and reduce. Stir in the coriander and correct the seasoning then set aside.
Place the prawns in to a simmering court boullion. Cook for 2-3 minutes and drain the prawns.
Prepare the prawns by removing the shell from teh meat and place into the spiced Millac Gold.
Serve with a little mango salsa.
