Loaded Sweet Potato

Serves: 12
Ingredients
- 6 large sweet potatoes
- 200g sliced spring onions
- 200g diced red pepper
- 200g pancetta (diced and cooked)
- 200g grated cheese
- 500ml Millac Gold
- Cornish sea salt
- Freshly milled pepper
Method
Bake the sweet potatoes in a hot oven until cooked
Remove from the oven and allow to cool slightly before cutting in half lengthwise
Scoop out the potato and place into a bowl
Add the spring onions, peppers, pancetta and cheese
Season well and stir in the Millac Gold
Place filling back into the skin and bake until golden brown
Serve half a potato per portion with a few mixed leaves
