Lime, Passion Fruit & Mango Semifreddo
Serves: 12
Ingredients
- 500ml Millac Gold
- 4 egg yolks
- 4 egg whites
- 75g caster sugar
- 3 limes, juice & zest
- 6 passion fruits
- 2 large mangos, peeled & diced
Method
Whisk the egg yolks and the sugar until pale and creamy
Whisk the egg white to meringue stage
Whisk the Millac Gold to soft peaks
Fold all three together and add the lime juice and zest and the passion fruit seeds
Place into a shallow dish, cling film and freeze
Once frozen, scoop into bowls and serve with the mango
