Rum & Raisin Parfait

Serves: 12

Ingredients

  • 400ml Millac Gold
  • 12 eggs
  • 150g caster sugar
  • 150g raisins
  • 70ml rum

Method

Soak the raisins in the rum

Whisk the eggs and the sugar over a bain marie until light and fluffy

Whip the Millac Gold into soft peaks

Fold the Millac Gold through the egg mix and add the raisins

Place into lined ramekins and freeze until set

Serve frozen with a little fruit garnish
