Rhubarb Fool

Serves: 10
Ingredients
- 500ml Millac Gold Double, whipped
- 700g fresh rhubarb or canned rhubarb, drained
- 150g caster sugar
- 100ml raspberry coulis or 50g raspberry jam heated with 50ml water
Method
Cut the rhubarb into pieces, sprinkle with caster sugar and bake in the oven at 160°C for 30 minutes.
Remove from the oven, reserving the syrup and 10 small pieces of rhubarb for decoration.
Fold the rhubarb into the whipped Millac Gold Double, gradually adding the reserved syrup.
Place into serving dishes and decorate with a piece of rhubarb and a drizzle of coulis or jam mixture.
