Millionaire's Shortbread

Ingredients
For the Base:
100g Lakeland Dairies Butter
250g shortbread or digestive biscuits made into crumbs
For the Topping:
500ml Millac Gold Double
250g sugar
50g Lakeland Dairies Butter
150g dark chocolate
Method
Method: Base
Melt the butter.
Mix in the biscuit crumbs and press into a shallow lined pan approximately 31cm x 21cm.
Allow the base to set and cool.
Method: Topping
Melt the butter in a pan and add the sugar stirring constantly until caramel brown.
Gradually pour in the Millac Gold Double stirring constantly to ensure that the mixture is smooth and does not burn. Be careful as the mixture can bubble up the sides of the pan.
Return to the boil then simmer for 5 minutes, until thick.
Allow to cool slightly and pour over the base.
Leave to set.
Melt the dark chocolate and pour over the caramel topping and allow to set.
