Lobster Linguine

Serves: 12
Ingredients
- 800g linguine
- 100g Lakeland Dairies Butter
- 300g diced white onion
- 1.5kg lobster meat
- 200g tomato concasse
- Cornish sea salt
- Freshly milled pepper
- 500ml Millac Gold Double
Method
Cook the linguine in boiling salted water then drain well
Melt the Lakeland Dairies Butter in a thick bottom pan and cook the onions without colour
Add the lobster and tomato then season well
Add the Millac Gold Double, bring to the boil and check the seasoning
Add the linguine and garnish with picked lemon balm
