Lemon Syllabub (Fortified Recipe for Care Homes)

Serves: 10

Ingredients

  • 1 litre Millac Gold
  • 3 lemons, juice & zest (keep a little of the zest for a garnish)
  • 150g lemon curd
  • 250g caster sugar
  • mint leaves

Method

Whisk the Millac Gold until it becomes light and fluffy.

Dissolve the sugar with the lemon juice and stir in the curd - add this mixture to the Millac Gold, as well as the lemon zest.

Spoon into 10 dessert glasses and garnish with a little mint and the remaining lemon zest.
