Lemon Syllabub

Serves: 10
Ingredients
- 1 litre Millac Gold
- 3 lemons, juice & zest (keep a little of the zest for a garnish)
- 150g lemon curd
- 250g caster sugar
- mint leaves
Method
Whisk the Millac Gold until it becomes light and fluffy
Dissolve the sugar with the lemon juice and stir in the curd - add this mixture to the MIllac Gold, as well as the lemon zest
Spoon into 10 dessert glasses and garnish with a little mint and the remaining lemon zest
