Irish Seafood Chowder

Ingredients

  • 600ml Millac Gold
  • 350g mixed seafood
  • 600ml vegetable stock
  • 200g diced white onions
  • 100g sweetcorn
  • 150g diced peppers
  • 150g diced sweet potato
  • 20g chopped chillies
  • 50g diced leeks
  • 10g chopped chives
  • 100g Lakeland Dairies Butter
  • sea salt
  • milled black pepper

Method

Melt the Lakeland Dairies Butter in a pan and cook the potato and onions without colour.

Add the sweetcorn, leeks and chillies. Pour in the stock and simmer.

Add theseafood and peppers.

Finish with the Millac Gold and correct the seasoning.

Serve with some chopped chives.
