Homemade Scones with Jam & Cream

Serves: 10

Ingredients

  • 500ml Lakeland Whipping Dairy Cream or Millac Gold Double
  • 150ml Viva Whole Milk
  • 50g Lakeland Dairies Butter
  • 225g self raising flour
  • 8g baking powder
  • 30g caster sugar
  • 70g sultanas
  • pinch of salt
  • 1 egg
  • jam (to serve)

Method

Sieve the flour, baking powder and salt into a bowl.

Add the sugar and Lakeland Dairies Butter and mix to a breadcrumb consistency.

Make a well and add the Viva Whole Milk slowly, then the sultanas.

Once a smooth dough is formed allow to rest for 10 minutes.

Roll out on a floured surface and cut your 10 scones.

Brush with egg wash and bake for 15 minutes in a hot oven, 180˚C.

Allow to cool slightly and serve with jam and whipped Lakeland Dairy Whipping Cream or Millac Gold Double
