Fortified Cream of Tomato Soup

Serves: 8 - 10

Ingredients

  • 2 carrots
  • 2 sticks of celery
  • 2 medium onions
  • olive oil for frying
  • 800g tinned tomato
  • 10 large ripe tomatoes
  • 1 small bunch of fresh basil
  • 1.2 litres chicken or vegetable stock
  • 50g tomato puree
  • 250ml Millac Gold
  • seasoning as required

Method

Peel and roughly chop the carrots, celery, onions and garlic.

Heat olive oil in a large pan and add all chopped ingredients.

Stir on a medium heat for approx. 15 mins, until carrot starts to soften.

Add the tinned tomatoes, fresh tomatoes, basil stalks and chicken stock to pan and simmer for approx. 15 mins.

Remove from the heat and add basil leaves. Using hand blender or liquidiser pulse soup until smooth.

Add Millac Gold for fortification and a deep richness of flavour.

Season as required.
