Dublin Coddle & Champ

Serves: 12
Ingredients
- 100ml Millac Gold Double
- 800g mashed potato
- 100g sliced spring onions
- 6 sausages
- 200g bacon
- 1000ml vegetable stock
- 100g cooked new potatoes
- 100g carrots
- 100g leeks
- 10g chopped chives
- 100g Lakeland Dairies Butter
- sea salt
- milled black pepper
Method
Melt the Lakeland Dairies Butter in a pan and cook the spring onions without colour.
Add the mashed potato. Finish with Millac Gold Double and correct the seasoning then set aside the champ.
Cook the sausages, bacon, leeks and carrots ina a large casserole dish.
Add the stock, new potatoes and simmer, correct the seasoning.
Finish with some chopped chives and serve with the champ.
