Filo Pastry Tartlet

Ingredients

  • 250ml Millac Gold Single
  • 100g Lakeland Dairies Salted Butter (melted)
  • 8 Sheets Filo Pastry
  • 150ml Viva Semi Skimmed Milk
  • 4 Whole Eggs (Large)
  • 2 Egg Yolks (Large)
  • 100g Leeks
  • 100g Smoked Streaky Bacon
  • 100g Mushroom

Method

Cut the filo sheets into squares that are slightly larger than the tart case you have chosen to use. Butter the pastry and place another layer on top. Place this inside the tart case and set to one side.

Sweat the leeks, bacon and mushroom with a little oil and season well.

Make the quiche mix by whisking all the remaining ingredients together and leaving to stand for 5 minutes.

Add the sweated cooled ingredients to the lined tart shells and pour the quiche mix over the top.

Bake in a pre-heated oven at 160°C for approx. 10-12 minutes or until fully cooked.

Leave to cool fully before removing and serving. Garnish with a simple rocket salad.
